Hendersonville sits just south of us — Fletcher is the town between Hendersonville and Asheville, so this is about as local as our tallow ever gets. Apple country, a classic Main Street, and a couple of ridgelines from our stove.
Henderson County is orchard country, the apple capital of the Carolinas, and Hendersonville has one of the prettiest downtowns in the mountains. Same county as us, same air, same slow pace we render by. When the first batch comes off the stove, Hendersonville is on the very short list to get it first.

Tallow is rendered beef fat. Its fatty-acid profile — mostly oleic, stearic, and palmitic — is close to the oils skin makes on its own, so it absorbs rather than sitting on top. Grass-fed tallow also carries the fat-soluble vitamins A, D, E, and K.
